    I am trying to run the hello-world application on an STM32F407VG target.

    I have the packs installed and can verify using JLinkExe on the CLI that my Mac is seeing the J-Link okay.

    However SES only gives me the "Connect to Simulator" under the target menu.

    Am I missing a step somewhere?

    Yes, the target connection is a project setting.

    In the Project Properties at Debugger -> Debugger Options change Target Connection from Simulator to J-Link.
    Now you can select Connect to J-Link instead of Connect to Simulator.
